Sweet Raspberries – A Delicious Treat from Our Garden

Raspberries are one of the most popular fruits to grow in the garden. Who can resist the soft, sweet flavour of these beautiful red berries?

The raspberry belongs to the rose family and grows naturally throughout much of Europe. In the wild, raspberry bushes are commonly found along woodland edges and in sunny forest clearings.

They are also a favourite in home gardens. With both summer- and autumn-fruiting varieties available, you can enjoy fresh raspberries from June through October.

Raspberries are most often used in desserts, but they also add a wonderful sweet touch to fresh salads. Branches with unripe berries can even be incorporated into floral arrangements for a charming natural decoration.

 

Raspberry Tiramisu with Raspberry Coulis

Give classic Italian tiramisu a fruity twist with fresh raspberries. Instead of soaking the ladyfingers in coffee and amaretto, they are infused with a delicious homemade raspberry coulis.

Ingredients

  • 500 g mascarpone cheese
  • 250 g fresh raspberries
  • 2 eggs, separated
  • 100 g icing sugar (powdered sugar)
  • 1 package ladyfinger biscuits (savoiardi)

Method

  1. In a mixing bowl, whisk together the egg yolks and icing sugar until the mixture becomes pale and creamy.
  2. Add the mascarpone and stir until smooth and well combined.
  3. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the mascarpone mixture.
  4. Rinse the raspberries briefly and allow them to drain. Blend 300 g of raspberries until smooth, then press the purée through a fine sieve to remove the seeds. If desired, sweeten the coulis with a little extra sugar.
  5. Stir one tablespoon of the raspberry coulis into the mascarpone mixture.
  6. Assemble the tiramisu in small glasses or dessert jars:
    • Place one ladyfinger biscuit in the bottom.
    • Spoon over a little raspberry coulis.
    • Add a layer of mascarpone mixture.
    • Repeat the layers until the glasses are about two-thirds full.
    • Last added a layer of ladyfinger crumbles
    • Finish with a few fresh raspberries and, if desired, garnish with fresh mint leaves.
  7. Refrigerate for several hours, or preferably overnight, until the tiramisu has set.
