Origin: Chicory Brussels ‘Bingo’ is a Belgian witloof chicory variety developed for producing compact high-quality chicons with reliable forcing performance
Flavour: Mildly bitter, crisp, and slightly nutty with a refreshing delicate flavour that becomes sweeter after blanching or cooking
Best place to grow: Thrives in open fields, raised beds, and fertile vegetable gardens with loose well-drained soil in full sun
Fun Fact: Brussels chicory is traditionally forced in darkness after root harvesting to produce its pale tightly packed heads known as chicons or witloof
Shape, size & colour: Produces upright green leaves during the growing season and forms compact elongated creamy-white chicons with pale yellow tips during forcing
Applications: Ideal for fresh salads, gratins, steaming, roasting, braising, and traditional Belgian and French dishes
